Trente minutes avant la fin du temps de levage, pr\u00e9chauffez le four \u00e0 230 \u00b0C et placez-y un grand plat en fonte avec un couvercle.<\/p>\n<p>2. Agitez la p\u00e2te sur une surface farin\u00e9e, mais ne la p\u00e9trissez pas. \u00c0 l\u2019aide d\u2019une spatule, ramenez plusieurs fois les bords de la p\u00e2te vers le milieu.<\/p>\n<p>3. Retirez le couvercle du plat et placez-y d\u00e9licatement le papier sulfuris\u00e9 sur lequel se trouve la p\u00e2te.<\/p>\n<p>7. Replacez le couvercle sur le plat et enfournez-le.<\/p>\n<p>8. Faites cuire le pain pendant 30 minutes dans le plat avec son couvercle, puis retirez ce dernier et poursuivez la cuisson pendant 12 \u00e0 15 minutes.<\/p>\n<p>9. Le fait de laisser le couvercle permet \u00e0 la vapeur de rester \u00e0 l\u2019int\u00e9rieur, et au pain de bien lever avant que sa cro\u00fbte ne s\u2019ass\u00e8che et ne durcisse.<\/p>\n<p>10.
